About Our Bespoke Catering

Our bespoke catering model is inspired by Chef Will Giudara, author of Unreasonable Hospitality: The Remarkable Power of Giving People More Than They Expect. It is about creating permanent memories, one size fits one, and your vision and our expertise. 

Let's Say Your Event is a Wedding  

The process begins with a relaxed, conversational, and complimentary consultation with one of our chefs. Depending upon the complexity of the event, it can last from 30 minutes to as much as 90 minutes. The discussion is unlike making a call for take-out food, ordering from a prearranged menu, or speaking with a caterer who trucks in food made off site. Since bespoke catering means bringing your vision to life, that means getting to know you, your event, and your venue. 

Here's exactly what to expect:

Before the Consultation

• We may have already learned some about your venue. If public information is sparse, we may confidentially reach out to your venue to obtain some first-hand information. A venue's amenities influence your menu and service style options. 

  • • We may have already learned some about you from a few everyday Google searches. This is part of delivering more than you expect to help ensure that one size fits one. 

During the Consultation

The atmosphere will be relaxed and conversational. Expect quite a lot of questions such as

• • • "How and where did you two meet?"

    • "What did you grow up eating and what do you most like eating today?"

    • "Are there any places in the world that hold special significance to you?"

    • "What is the most memorable meal you have ever eaten?"

    • "On flavor alone, what are three foods you would not want to live without?"

    • "What is your favorite vegetable?"

    • "What is your most favorite meat?"

    • "If every hope could be fulfilled, what is the culinary vision for your wedding?" 

    • "Do you have any questions? Ask me anything!"

    • Etc.

By asking the above sorts of questions, we get to know you on a deeper level and you can get to know us. From that point, we will

• • • Learn some about your guests.

    • Learn more about your venue, if we are not already familiar with it.

      • Discuss menu ideas.

    • Understand your desired service style(s).

    • Understand your budget.

    • Learn about any dietary restrictions.

    • Ask a few questions "just in passing" to help us give you unreasonable hospitality that is more than you expect. 

    • Advise you based upon all of the information we have gathered. Your vision, our expertise.

    • Etc.

After the Consultation

• • • We will decide if everything is a good fit between us, you, and your venue. 

    • We will consult with our core team about how to deliver you unreasonable hospitality, more than you expect, and create a custom menu proposal, sometimes several, with pricing, just for you. One size fits one.

    • You will be invited to comment directly on the menu draft proposal(s) within Google Docs. Your vision, our expertise.

    • Expect reasonably frequent follow-up prods. More than one couple may be vying for the same date you desire. 

    • Once we settle on a menu and pricing, an 18% retainer locks in your date.

    • Throughout, you can reach out to us via voice, text, or email, and expect a return reply shortly. 

    • We will have two scheduled brief "touch base" conversations ~45 days and ~10 days prior to your event.
